Grilled Chicken Wings

Ingredients

3 Lbs chicken wings

1 5oz bottle Kathy's Cayenne Sally Hot Sauce

salt and pepper to taste

Olive oil and towel to oil the grill grate

Directions

1Oil your grill racks and then prepare your grill for direct grilling over medium heat, about 350ºF.

2Place wings on grill and close the grill lid for about 3 minutes

3Open the grill id and examine the underside of the wings using tongs. Some will darken faster than others. This is all about watching and turning.

4When the underside is darken enough, turn the wings over to cook the other side. Watch them closely, keep monitoring and flipping them and move any wings to a cooler part of the grill when they've darkened enough. They’ll keep cooking but not browning.

5After 15 minutes, use an instant-read thermometer in the center of a few wings to make sure that they’ve all reached 165ºF. If some aren’t quite there, give them another 5 minutes.

6What you want are wings that are nicely charred on all sides and cooked through.

7Once all of the wings have reached the correct internal temperature, place them all in a bowl.

8Add one bottle of Kathy's Cayenne Sally Hot Sauce and toss the wings until they are all coated.
